JACK DANIELS & PANCAKES?!? YES!

Have you ever tried chicken and waffles? Or have you thought the idea of chicken with waffles is weird? If you have tried it and loved it (and even if you haven't!) you have got to try THIS recipe!! Let's face it... most of our LEO's love to drink!! This recipe incorporates not only Jack Daniels BBQ, but also whiskey! That's right...WHISKEY! I gurantee your LEO will love it! AND, it's pretty healthy too! The best of both worlds!!

Serving Size: 2 pancakes with pulled pork BBQ and whiskey syrup.

Ingredients:

  • Hungry Jack Complete Extra Light & Fluffy Pancake Mix

  • Jack Daniels Pulled Pork with Jack Daniels BBQ Sauce (Found at Wal-Mart, Publix, etc.).

  • Sugar-Free Maple Syrup (I used Maple Grove Farms)

  • Jack Daniels Old No. 7 Whiskey (use as much as you would like, but if warming in the microwave,

the alcohol won't cook off as much as it would on the stove! So be careful!).

Directions:

1. Make pancakes according to package instructions.

2. Heat the Jack Daniels Pulled Pork according to package instructions (I did 3 minutes in the microwave).

3. Mix Jack Daniels Whiskey and sugar-free maple syrup together and heat in microwave until warm.

4. Place pulled pork on top of one pancake, place second pancake on top and then pour whiskey syrup over the stack.

5. ENJOY!!

Note: The calorie count for my serving was 288.5 - I had two pancakes out of 1/3 cup batter and used 2 oz of pulled pork. For the Whiskey Syrup, I used 1/4 cup of the sugar-free maple syrup and .5 oz of whiskey and split it between my husband and I. If you aren't concerned about calories, go ahead and pile on the pork or have an extra pancake! :)
