Cinnamon Apple Chicken & Sweet Potato Packets


Looking for an easy, healthy and delicious recipe for dinner tonight? Try my Cinnamon Applesauce Chicken and Sweet Potato Foil Packets!! The cinnamon and brown sugar mixed with the sweet potatoes and chicken makes a wonderful and tasty combination!!

Servings: 2

Ingredients:

  • 2 Boneless Skinless Chicken Breasts

  • 1/2 cup Cinnamon Applesauce (I got mine from Sprouts)

  • 2 teaspoons Cinnamon (1 tsp for each packet)

  • 2 teaspoons Truvia Brown Sugar (1 tsp for each packet)

  • 10 oz Sweet Potato (I put 5 oz in each packet, but you can put however much you would like!)

Directions:

  1. **A few hours beforehand: Cut slits in your chicken breasts and pour the 1/2 cup Cinnamon Applesauce on top. Let the chicken marinate.**

  2. Preheat oven to 350 degrees.

  3. Cut your sweet potato into cubes

  4. Cut two sheets of aluminum foil (one for each packet). Spray with nonstick spray. Transfer your marinated chicken and some of the applesauce to each packet.

  5. Divide the sweet potato cubes and add to your packets.

  6. Sprinkle the chicken and sweet potatoes in each packet with 1 tsp cinnamon and 1 tsp Truvia brown sugar.

  7. Fold the packets up and lay them on a baking sheet.

  8. Bake for about 35-45 minutes or until chicken is cooked through.

  9. Unwrap your foil packets and enjoy!

Calories: 284 (based on a 4 oz chicken breast with 5 oz sweet potato cubes)
